Oven Baked BBQ Chicken


Note: I’ve tried chicken breasts and thighs with this. They all work. I just like the portion control of the leg.


INGREDIENTS


Chicken (this recipe easily makes 8 drumsticks so judge accordingly)

Rub:

2 tsp brown sugar

1 tablespoon paprika or chipotle pepper

1 tsp all spice

1 tablespoon chili powder

1 tsp ground cumin

1/4 tsp salt


Sauce:

1 - 2 tsp brown sugar (depending on how sweet you want your sauce)

1 tsp apple code via hat

1/2 tsp Worcestershire sauce

1/3 cup ketchup

1 tsp chili powder


STEPS:

  1. Preheat over to 425. Cover a sheet pan with foil. Set a wire rack on top and spray with cooking spray.

  2. Mix the rub ingredients together until combined.

  3. Take the pieces of chicken and rub the rub all over it. Slather it. Don’t let that bird die in vain! Don’t forget to pull the skin back and rub there as well.

  4. Place the pieces of chicken on the wire rack on the sheet pan and bake for 35 minutes.

  5. Meanwhile, mix the sauce ingredients and set aside.

  6. After 35 minutes, take the chicken out and brush the sauce on top. Again, slather that chicken!

  7. Put back in the oven for 10-15 minutes.

  8. Take out of oven and let it rest for 5-10 minutes.

When I say I make this once a week, I mean it. It’s a go to for me because it has so much flavor but I also know what ingredients I’m putting in my body. I also make sure to make enough to have left overs cause it pairs great with any side.
