My Go To Chocolate Chip Cookies

INGREDIENTS 1 teaspoon baking soda 1/2 teaspoon salt 10 tablespoons (1 1/4 sticks butter), softened 1 cup packed brown sugar 3/4 cup powdered sugar 2 eggs 2 teaspoons vanilla extract 12-ounce bag semi-sweet chocolate chips 2 1/2 cups flour

STEPS: 1. Preheat oven to 330°F. 2. Combine butter, brown sugar and powdered sugar in a separate bowl and cream with electric mixer until fluffy. 3. With mixer running, add eggs, one at a time, then add vanilla. Mix until combined, scraping sides of bowl.

4. Slowly add baking soda, salt and flour, scraping sides of bowl.

5. Take half of the chocolate chips and roughly chop them, Add those, and the ones left in the bag, into the mixture.

6. Scoop 1 tablespoon dough for medium cookies and 2 tablespoons for large onto ungreased baking sheet. Bake until light golden. Every oven is different but I find the perfect time to be 11-12 minutes. 11 minutes is perfectly underdone. 12 minutes gives the crispier edge.

SECRETS: 1. Chop half of the chocolate chips? YES! Trust me. Run a sharp knife through them. It helps distribute the chocolate. 2. Refrigerate the dough at least 30 minutes before scooping and baking. It helps them not spread so thin. 3. Top with course sea salt. Chocolate and salt together - chef's kiss! 4. You do not have to make all the cookies at one time. Put extra dough in the fridge if you want to use it later in the week. If freezing for later use, I recommend making the dough into already prepared balls so you can "break and bake." I like to have some on hand for an "in case of emergency" situation. You never know when a cookie will be needed to offset a bad day! Guys, if you know me, you know my weakness is a good homemade chocolate chip cookie. Like I could reject every other sweet but if you put a fresh cookie in my face, that baby is gone. It's the only thing I crave. This particular recipe came from a journey of finding the BEST cookie recipe. I tried several different kinds but this was by far the best. I won't bore you with my ill attempts ending in flat cookies, cake cookies and sadly burnt cookies. You may recognize this recipe as the one form the Grand Floridian in Disney World. It's essentially that, but with a few modifications and additions. Of course this makes sense. I mean, what's better than Disney and dessert? (Um, nothing in case you needed the answer.) During this batch, I broke one of my Mickey measuring cups. Literally dropped it in the mixer and it broke. Luckily we found all three pieces and saved the dough, but man, I was bummed. Although I have 3 different measuring cup sets, that was my favorite one. Oh well. So, I'll leave you to try this recipe and let me know what you think. Is it your favorite? Is there something you would want to add? I'll admit, sometimes we add M&Ms or sprinkles to it, but for me, the original can't be beat.
